Tokaj Wine Area

The meeting of the climate and the excellent nature of the farmland can be considered a huge coincidence. The "King of Wines" was born as a result of the lucky environmental factors and the expertise and centuries of work of diligent grape growers and cellar masters who kept secrets passed down from father to son.

Tokaji wines owe their unique properties to several circumstances. For the optimal climate, the very favorable soil, and the grape varieties. However, particularly important are the CELLARS, which were cut narrowly and low in rhyolite and tuff in large numbers, sometimes crossing several floors, weaving through and through the vine-growing mountains, up to a depth of 10-30 meters.

These cellars used to serve as a shelter during the Tatar invasion and Turkish occupation.
Almost every family in Hegyalja had such a hiding place, where they hid their valuables and often their lives. Later, using the branches of the cellar, the barrel-making masters of Gönci made small-sized barrels, which could be easily stored in these narrow cellars, and then they gave the basic size of Tokaji Aszú wine to 136 liters.
If you visit these cellars, you immediately notice the thick, black coating on the walls, which is formed by a mold fungus. This cellar mold, Cladosporium cellare, provides a special microclimate that determines the unique, incomparable taste of ripe Tokaji.
The constant temperature of the cellars is 8-12C, relative humidity 78-98%
